Okara is a deliciously nutritious remnant of soymilk making with your SoyQuick Automatic Soymilk Maker. Many people don't realize that the pulp that is left behind after grinding the soybeans is a highly nutritious product that contains plenty of soluble and insoluble fibre as well as a modest amount of protein.
Since the okara produced with your soymilk maker is already cooked, you can use it immediately in your
favourite recipe, or freeze it for later use. It will keep 2 or 3 days in the refrigerator, or up to 4 or 5 months in the freezer.
Okara, like tofu, has little flavour on its own; however, here are just a few of the ways you can give okara delicious
flavour.

JAPANESE OKARA NIMONO
Ingredients
1 pound okara
2 1/2 cups dashi soup stock
4 hoshi-shiitake mushrooms
1/2 carrot
1/4 leek
2 tsp vegetable oil
3 tbsps soy sauce
2 tbsps sugar
1 tbsps sake
Method
Soak shiitake mushroom in water for 30 minutes. Cut the mushroom and carrot into thin strips. Slice leeks into thin round shapes. Put dashi soup stock, sake, sugar, and soy sauce in a pan. Add onion and shiitake mushroom strips in the pan and simmer for a few minutes. Put vegetable oil in a frying pan and
sauté okara on high heat. Add the soup in a frying pan and mix well. Stop the heat.
