Okara Loaf

Okara 
Okara is a deliciously nutritious remnant of soymilk making with your SoyQuick Automatic Soymilk Maker. Many people don't realize that the pulp that is left behind after grinding the soybeans is a highly nutritious product that contains plenty of soluble and insoluble fibre as well as a modest amount of protein.

Since the okara produced with your soymilk maker is already cooked, you can use it immediately in your favourite recipe, or freeze it for later use. It will keep 2 or 3 days in the refrigerator, or up to 4 or 5 months in the freezer.

Okara, like tofu, has little flavour on its own; however, here are just a few of the ways you can give okara delicious flavour.

 


OKARA LOAF

 

Ingredients

2 1/2 cup Whole-wheat flour 

1/2 cup Toasted wheat germ 

1 fresh garlic clove 

1/2 tsp. Dried oregano 

1 tsp. Dried basil 

1/2 tsp. Dried thyme 

1/4 tsp. Black pepper 

2 1/2 cup Fresh okara 

1/3 cup Vegetable oil 

3 tbsp. Tamari 

2 tbsp. Honey 

2 tbsp. Vinegar 

1/2 cup Soy milk 

Method
1. Combine the wheat flour, germ, garlic, oregano, basil, thyme and pepper in a bowl.

2. Combine okara, veg oil, tamari, honey, vinegar, and soymilk in a second bowl.

3. Combine contents of two bowls.

4. Place mixture into a greased loaf pan. Cover with foil and steam on a wire rack over boiling water in a big pot, or in oven (350°F) with pan of water on lower rack.

5. Cook about 1 hour.

6. Cool in pan, remove from pan. Store in fridge one week or freeze up to six months.

Yield: 1 Loaf
